The artichoke (Cynara scolymus L) comes originally from Asia Minor and has been cultivated and used as food in mild climate countries. It was already known to the ancient Egyptians, Greeks and Romans. In the sixteenth century, the liquid from boiling the leaves was considered an aphrodisiac drink and, until the eighteenth century, as the elixir of youth. It is now grown in cold climates and is a common food in every home.
